We are a mobile food truck serving unique and flavorful gourmet tacos. We give you something unexpected by taking your standard taco and putting a spin on it. We believe, and want you to realize, we are the best at what we do.
Taco Bus delivers the real taste of Mexico with/or based on traditional recipes from every region of the country, each prepared daily with fresh ingredients in a custom kitchen. At breakfast, lunch and dinner, our menu features familiar favorites, daily specials and even a variety of vegetarian, vegan and gluten-free selections.

Few countries have such an extensive variety of tamales as Mexico, where they are considered one of the most beloved traditional foods, that is eaten for breakfast, lunch or dinner, and usually with Atole or Champurrado, a sweet maize-based beverage that is also of indigenous origin. Almost every region and state in the country has its own kind of tamale, and now we are making our own savory and sweet as well as traditional and contemporary flavor tamales up here in the Northwest made with local, sustainable, and organic ingredients.
Owners and Chefs Jennifer and Bryan Illingworth studied at Western Culinary Institute. They have spent the last 9 years catering and developing their BBQ concept. While their background is french cuisine their passion is West Coast BBQ.
What is west coast BBQ?
We utilize the ingredients that are grown in our region. Fresh herbs and spices that make up our rubs. Local veggies for stocks, sauces salads and slaws. When available we use Free range, hormone free meats.
A food truck specializing in New Mexican cuisine! Offering green or red chile dishes with authentic New Mexico grown chile. Come try some chile verde, carne adovada, tacos, gorditas, or enchiladas (New Mexico style of course!) All made from scratch daily and prepared to order.
The Farm Food Cart is located on-site at Minto Island Growers Farm. Farm Food Cart uses the farm and its fresh, organic vegetables as a source for its seasonal recipes. Our goal is to provide fresh, seasonal dishes for all to enjoy! Open June 1st to September 30th.
